BUTTERNUT SQUASH AND TURKEY CHILI
You will need:
1 butternut squash, peeled and chopped
1 medium onion, chopped
2 T coconut oil
several mini bell peppers, chopped
several stalks of celery, including tops, chopped
2 cans diced tomatoes
2 cups water or stock
1-2 cups cooked quinoa
1-2 lbs ground turkey
Spice with plenty of chili powder, cumin, garlic & sea salt
*Add any other chopped veggies you like (carrots, zucchini, yellow squash)
Stovetop Cooking Instructions
Saute butternut squash and onion in large stockpot, until onion is translucent.
Add all remaining ingredients. Combine well.
Cover and simmer 30-45 minutes, stirring frequently.
*You can add beans and/or lentils (especially if you are vegan or vegetarian).
Serve with cornbread, shredded cheese, Greek yogurt (in place of sour cream, of course), tortilla strips or chips, chopped fresh red onion, chopped fresh tomatoes. Whatever your heart (or, rather, stomach) desires!
