I am again inspired to make a healthy treat. Yesterday, I dug into store-bought tortilla chips and gluten-free cookies. (Yes, they are gluten-free, but not sugar and calorie-free. And I ate all 12 in one day!!)
Sometimes, I don’t want to make a protein shake when I get home from the gym or a run. I like to have a quick protein option at the ready: hard-boiled eggs, turkey slices or a homemade protein goodie, like these No-Bake Protein Balls.
You will need:
1 1/2 c rolled oats, ground to flour
1/2 c protein powder (unflavored if you are using a store bought variety) OR a combination of cacao powder and powdered peanut butter
3 t ground flaxseed
3 t chia seeds
1/2 c Multigrain Cheerios, lightly ground (some chunky pieces remain)
1/2 t fine sea salt
1/2 c nut butter
1/2 c honey or pure maple syrup
1 t pure vanilla extract
1/2 c unsweetened vanilla almond milk
In a large bowl, mix oat flour, protein powder, flaxseed, chia, cereal and salt.
Add in nut butter, honey or syrup, vanilla extract and milk.
Combine all ingredients until you get it like cookie dough. Adding additional almond milk, little by little, if necessary to achieve the right consistency.
Roll into balls (should make 12-15) and place into a muffin tin or on a baking sheet. Freeze 15 minutes. Remove from freezer and place into freezer-safe container/bag for storage.
You can also make a chocolate drizzle or dip:
1/2 c dark chocolate chips
1 T coconut oil
Melt the chips in microwave safe bowl, until about half of the chips are melted. Add in coconut oil and mix well to combine. Immediately drizzle over the frozen balls, then freeze for another 15 minutes to set before placing in freezer-safe container.
