Coconut Lime Rice Pudding

I had a can of Goya coconut milk that I was dying to use!  A quick search on the interwebs of some other ingredients on hand, voila!


Coconut Lime Rice Pudding


1/2 c long grain rice


cinnamon, to taste

1 can coconut milk (or 2 cups)

1/2 c raisins

zest of 1/2 lime

1-2 T honey


Add rice & cinnamon to a medium pot.  Cover with just enough water.  Bring to a boil, then simmer until the water is absorbed.  Stir occasionally to prevent sticking.

Pour in the coconut milk.  Stir.  Add more cinnamon, if desired.  Simmer 15-20 minutes.  Stir to prevent sticking.

Fold in raisins, lime zest and honey.  Simmer 5-10 minutes more.  Stir.

Make sure to keep a creamy consistency, so cooking time will vary.

The scents coming from this creation will make your mouth water and your home cozy and fresh! (Like my favorite Bath & Body Works scent, Coconut Lime Verbena, which they discontinued….)

The taste….indescribable!  The perfect amount of sweetness from the little bit of honey balanced with the refreshing lime, the creamy coconut milk and the warm cinnamon.
