Cinnamon Spice Sweet Potato Chickpeas

This will make your house smell soooooo good!

Cinnamon Spice Sweet Potato Chickpeas

1 large sweet potato, peeled & chopped

1 can chickpeas, rinsed & drained

1 small onion, peeled & chopped

1 teaspoon cinnamon

1 teaspoon salt

1 teaspoon curry powder

1 Tablespoon coconut oil

Preheat oven to 400 degrees.  Spray baking sheet with oil.

In large bowl, combine sweet potato, chickpeas, onion, cinnamon, salt and curry.   Then add the coconut oil.  Mix well.

Spread onto baking sheet and bake for 35 minutes.

Remove from oven and place in a bowl.

Add more seasoning, if desired.

Enjoy as a snack or part of a meal.
