HARVEST POWER MUFFINS
4-5 T pumpkin puree (not pumpkin pie filling)
2 t unsweetened applesauce
1 egg (or 1 chia or flax egg)
1/4 c non-packed brown sugar
1/2 c ground flaxseed
1/2 c oats
1/4 c ground oats (like flour)
1/2 t baking soda
1 1/2 – 2 t cinnamon
2 T chia seeds
1/2 c dried fruit, dark chocolate chips and/or walnuts**
Preheat oven to 350 degrees and grease a 6-cup muffin tin.
Mix pumpkin, applesauce, egg and brown sugar in a bowl. In a separate bowl, combine oats, oat flour, flaxseed, baking soda, chia seeds and cinnamon. Slowly add dry ingredients to wet. Gently fold in nuts, dried fruit and/or dark chocolate chips.
It will be a slightly dry batter; however, you could add a tablespoon or two of water to thoroughly combine.
Divide into muffin cups and bake 15-20 minutes.
These don’t rise, so feel free to be generous with each muffin.
**I prefer dried cranberries and Ghirardelli 60% dark chocolate chips, along with chopped walnuts.**
